Here is the recipe for those who like molasses cookies. I make the whole batch, scoop the dough, roll them in sugar and freeze what I don't bake.
1 1/2 c. butter
2 c. sugar
2 eggs
1/2 c. molasses
4 tsp. baking soda
2 tsp. ground cloves
2 tsp. cinnamon
1 tsp. ginger
1 tsp. salt
4 1/2 c. flour
Bake @350 for 10-13 minutes, until the tops of the cookies crack.

Oh yum. And then add chocolate over the coconut? Sounds like heaven to me. Thanks for the cooke recipe, too. I'm gonna try these out next week. Tummy's growling!
